The plots are in the center of 600 ha of nature, the wind is a natural protection against diseases of the vine and the surrounding vineyards are organic.

The choice of varietals was done in the respect of the traditions of the region, with seven varieties: rolle, cinsault, grenache, syrah, typical of this terroir, but also cabernet-sauvignon, merlot and sauvignon, three noble grape varieties less present in Provence but perfectly adapted to the soil.

The calcareous and stony ground ensures a good drainage, the vine can thus fetch the water in depth.

The care of the soil rigorously follows the European directives for organic production, the whole process is certified Ecocert. The grassing of the surroundings and the vines, maintains the living environment and its fauna, the manual or mechanical picking favors the diffusion of the organic amendments.

Harvesting is done at full maturity, manually, gently thanks to the boxes of 20 kg, to preserve the integrity of the fruit. The grapes are sorted in the vineyard where the most beautiful bunches are kept: the ones that have reached maturity and whose health status is optimal.
For certain grape varieties, the grape harvests are made at night, so that the berries bring a maximum of aromatic complexity.

The whites are pressed gently. Like rosés, they ferment at low temperatures to preserve all the aromas.
The reds have a vatting of 15 days - 3 weeks, are subject to very little extraction and are treated under controlled temperature, with short and daily pumping over.

The estate works with two exceptional coopers, on barrels with custom-made heaters that allow the wine to express itself without taking wood.

All the wines ferment in natural yeast and the date of the bottling is determined according to the cycles of the moon to be in osmosis with the laws of the nature.

The wines being bottled without filtration, a slight deposit may appear on the whites and reds.

The follow-up is assured with vigilance by our cellar master and our wine consultant who know perfectly the resources and the traditions of the region.

Domaine de Lagoy is an agricultural property
located north of Saint Remy de Provence and integrated into the Regional Park of Alpilles. Its central point is the Château de Lagoy, a listed historical monument, whose construction dates back to 1714.

The Domaine de Lagoy produces red and rosé "organic" wines that benefit from the IGP Alpilles appellation. These are wines of character that express their terroir with fruity notes and a nice freshness. The vineyard was established for most of its 18 ha in 1976 on the plateau of Petite Crau and produces "organic" wines since 2001.

It is composed only of noble grape varieties: Grenache (34%), Cinsaut (21%), Syrah (14%), Merlot (11%), Cabernet Sauvignon (9%), the remaining 11% being divided equally between Caladoc. and Marsellan.

The terroir on which the vines are planted is particularly favorable for quality production.

The Boutique is located 9 bd Marceau in Saint-Rémy a little lower than the church and the mas de la Valentine 3 km from Saint-Rémy on the road to Noves.

Located at the eastern outskirts of Saint Rémy de Provence, at the place Galine, the Domaine GUILBERT extends over 6 hectares, around the Mas and the cellar, in a privileged environment, surrounded by olive trees and cypresses. It is the smallest domain of the Baux de Provence appellation.

Created in 2007 by Guy and Nathalie DELACOMMUNE, this thirty-year-old vineyard is planted on clay-limestone soil, naturally drained and enjoying exceptional sunshine throughout the year.

Located on the north side of the Alpilles, facing the Mistral and gently sloping, this terroir consists mainly of black grapes: Grenache noir, Syrah and Cabernet-Sauvignon. Cultivated in organic farming for a quarter of a century, this small vineyard, shows a controlled yield at 25hl per hectare. The production is divided into 50% rosé and 50% red.

Organic wine certified by ECOCERT FR-BIO 01 since vintage 2012

The red wine, produced mainly from Syrah and also from Black Grenache and Cabernet-Sauvignon, is deep and elegant. It is vinified in truncated wooden vats where it undergoes a slow maceration in order to capture all the complexity of this Provençal terroir.

It is then raised 12 months in oak barrels (3 ° wine), where it slowly refines in the cellar of the estate.

The rosé is made from Grenache noir and Cabernet-Sauvignon. The grapes are harvested early in the morning to preserve the freshness of the aromas and undergo direct pressing. The winemaking will then take place at low temperature throughout the fermentation, in order to extract the aromas that will give the typicity of this cuvée de rosé.

White is elaborated from Marsanne and will gradually be complemented by Roussanne, Rolle and Grenache Blanc. The grapes are harvested early in the morning to preserve the freshness of the aromas and undergo direct pressing after a slight maceration. The winemaking will take place at low temperature throughout the fermentation, in order to extract the aromas which will give the typicality of this cuvée.
