OLIVE OIL CONTROLLED APPELLATION OF ORIGIN -  BLACK FRUITY

Biodynamically cultivated, olives, harvested at full maturity, are sent to the mill and stored in boxes for several days. Thus began the delicate work of a light associated with fermentation expertise to find the taste of candied black olive mills millstone of our ancestors.

The black fruity Château Romanin is distinguished by aromas on the nose "non-working" or fermented, ca¬cao notes, undergrowth, cooked artichoke and a nice smooth finish. It is used in cold salad with garlic mayonnaise to mount, net of mushrooms, confit and mashed potatoes. It also does wonders with ratatouille and prawns a la plancha.
 
Romanin Castle olives are grown biodynamically. Picked comb, they are immediately transported to the mill and pressed within 24 hours to preserve the freshness of the fruit.

Our fruity green olive oil is characterized by a light fruity and harmonious, mixed with vegetable and spicy notes. Sweet, tender and fresh, it is a real gourmet product that will brighten up your kitchen. It is expressed wonderfully on warm dishes such as fish and steamed vegetables. It is well suited for marinades, salads and goat cheese. The agreement is perfect with raw artichokes prepared.

The Domain Castelas’ story began in 1997, when they fell in love with some old olive trees, planted in south-facing land in the rocky range of Les Alpilles, in the locality of Castelas. Today, Domaine Castelas produces olives on 110 acres of Appellation d’Origine Protégée groves in the Vallée des Baux

de Provence
, and in 160 acres on the Plaine de Crau.

In this mill, at the foot of the Château des Baux, Catherine and Jean-Benoît combine know-how, passion, exacting standards, technique and all of their olive farmers’ sensibility to create intensely powerful olive oils year after year, for pleasure constantly renewed.

In their characterful oils you will find the terroir of Les Alpilles, the varieties typical of the appellation (Salonenque, Aglandau, Grossane and Verdale) and the miller’s manual craft.
The CastelineS Collection unveils their oils’ treasures of flavour and complexity, distinguished regularly by prizes at the Concours Général Agricole in Paris.

Since 1744, in Mouriès, in the Valley of Baux-de-Provence, the Moulin Saint-Michel receives the harvest of the olive growers of the Alpilles. For three generations, our family has taken a passion for this place, this history and this noble profession.
After the grandfather, Joseph, Father Christian, it is now Laurent, the son who continues with the respect of ancestral techniques the manufacture of this precious nectar.

Do you want to visit this authentic place?
We organize guided tours all year round (by appointment). But they are scheduled on Tuesdays and Thursdays at 10:30 am from June to September.
The visit lasts about an hour, the history of the place, the modes of manufacture from 1744 to the present day, tasting ...

Located in the heart of Provence
among Fontvieille Maussane, Château d'Estoublon is a place which enjoys a natural setting and a unique terroir.

In a XVIIIth century provençal mansion, with a rich and romantic past, surrounded by gardens of roses, orchards, olive groves and vineyards; a large park with old trees and Mediterranean plants.

The shops are open all year, offering a wide groceries, which are broken down in olive oils and wines produced in the domain, gourmet specialties and refined, as well as collections of ready-to-wear, decorative objects, furniture.

 

Le Bistrot Mogador suggests in the gardens of the Castle or in the old cellars daily specials that emphasize aromas of oils and wines.
