Our orchard of 1000 olive trees is composed of varieties Grossane, Verdale, Aglandau, Salonenque, Picholine. Our olive grove is traditional with 200 to 250 olive trees per hectare We do not use any chemical fertilizer.
We only deal with Bordeaux mixture which is an effective fungicide, authorized in organic farming.


The olives are harvested by hand with a vibrating comb during November and then they are brought to the mill to be pressed without any treatment other than washing, decantation, centrifugation or filtration


Obtaining one liter of oil requires between 6 to 10 kilos of olives depending on the variety of olive used and its level of maturity. The extraction method used is cold, that is to say below 27 ° C by continuous and centrifugal systems


It has beneficial properties for health, especially cardiovascular, thanks to its content of vitamin A, vitamin E and less saturated fatty acids.


At home, after purchase, the olive oil will be kept away from light and heat that is why our olive oil is not bottled but in opaque can of a lite


 Our olive oil is kept in a food vat in cool shade in a place free of volatile contaminants (petrol or diesel fumes, fumes, aromatic compounds ...)

Divided into three categories of taste: green fruity olive oil, fruity ripe and fruity black.

- The fruity green: These are olive oils that provide herbal sensations in the mouth. There are aromas of artichokes and other green fruits.


-The ripe fruit: This fruity comes from the state of maturity more advanced olives during their harvest. There will be aromas of almond, red fruit, apples and other aromas of flowers. An oil rather mostly soft except exceptional case of olive oils from certain truths of olive.

-The fruity Black: The black fruity olive oils do not give aromas of vegetable or fruit, they are olive oils with notes of cocoa, mushroom, jam or vanilla. Which are the result of harvesting mature fruits that have followed a storage stage that result from traditional practices. They are oils without bitterness and without ardence. More length in the mouth and a characteristic taste of the black olive.

Our sweet, soft and fresh AOP Vallée des Baux-de- Provence Extra Virgin olive oil, with its vegetal and slightly spicy notes, will add a little something to your cuisine. Chateau Romanin Olive Oil _ Black




Our AOP Vallée des Baux-de-Provence Virgin olive oil comes from a blend of the olives varieties previously mentioned. The harvested olives are transported to the mill and stored in crates, protected from oxygen, for a few days. They then ferment alongside each other and turn black. Our craft production consists of conducting a light fermentation, using all our skills and experience, to recreate the candied black olive flavour typical of the grindstone mills of yesteryear. This oil is perfect with green vegetables, grilled white meats and fish carpaccio. Intense and sweet, it will delight all lovers of matured olives.

Domaine du Mourre de Viret sells its own olive oil. The Domaine du Mourre de Viret is a young olive grove, located in the foothills of the Alpilles on the lands of the Mas de Viret (17th century).

The olive grove was planted according to the standards of the appellation Vallée des Baux de Provence controlled and is raised according to the rules of organic farming. The olives, produced at the property, are pressed at the mill, without being mixed with other olives from crops outside the estate.

The oil is made from 4 varieties of olives: the living rooms, the grossanes, the aglandaus and the picholines, in the proportion of the Appellation d'Origine Contrôlée of which it has the approval.

This clever mix gives an oil that is both fruity and tasty, and very fine to enhance the dishes it accompanies without masking their flavor. Then, the oil is obtained from the traditional crushing of olives by sandstone grinding wheels, then from the cold pressing in traditional woven baskets of a traditional mill respecting the AOC and the biological standards ...

The Domain Castelas’ story began in 1997, when they fell in love with some old olive trees, planted in south-facing land in the rocky range of Les Alpilles, in the locality of Castelas. Today, Domaine Castelas produces olives on 110 acres of Appellation d’Origine Protégée groves in the Vallée des Baux

de Provence
, and in 160 acres on the Plaine de Crau.

In this mill, at the foot of the Château des Baux, Catherine and Jean-Benoît combine know-how, passion, exacting standards, technique and all of their olive farmers’ sensibility to create intensely powerful olive oils year after year, for pleasure constantly renewed.

In their characterful oils you will find the terroir of Les Alpilles, the varieties typical of the appellation (Salonenque, Aglandau, Grossane and Verdale) and the miller’s manual craft.
The CastelineS Collection unveils their oils’ treasures of flavour and complexity, distinguished regularly by prizes at the Concours Général Agricole in Paris.

The Moulin CORNILLE is located in the heart of the Vallée des Baux de Provence, a mill built in the 17th century and which became a cooperative in 1924. Since then, it has continued to develop, becoming one of the largest olive oil mills in France, with more than 800 active cooperating olive growers.

Since 1744, in Mouriès, in the Valley of Baux-de-Provence, the Moulin Saint-Michel receives the harvest of the olive growers of the Alpilles. For three generations, our family has taken a passion for this place, this history and this noble profession.
After the grandfather, Joseph, Father Christian, it is now Laurent, the son who continues with the respect of ancestral techniques the manufacture of this precious nectar.

Domaine de Valdition, located in the Alpilles between Orgon and Eygalières, is a beautiful natural area of 240 ha full of history.

The numerous Gallic and Roman remains discovered on the estate show that the vineyard and the olive tree were already cultivated more than 2000 years ago.

Producer of olive oil in organic farming on 30 ha of olive trees, the harvest is done by hand from the end of October until the beginning of December. The typical varieties of the valley of the leases are cultivated there with a predominance however for the aglandau which gives to our fruity oil green this characteristic ardence.




85 hectares of vines are also conducted in organic farming. Soils are fertilized with organic composts, pruning, disbudding and leaf stripping are done by hand.
The estate's grape variety is exceptional, with 21 grape varieties that have perfectly adapted to our stony soils.

The Boutique du Domaine welcomes you from Monday to Saturday from 9:30 to 12:30 and from 14h to 18h
In season, the shop also opens its doors on Sunday
